Got Archery off my bucketlist! Wow, it’s way harder than it looks!


I had the best run this week! We ran up the canyon to Bride Veil Falls and even managed to hike up the icy trail to get a better look. It was gorgeous and freezing! We kept slipping the entire way, but the sunrise was beautiful!

Oooohhh Have you heard the song Geronimo by Sheppard? It’s definitely my favorite song this week 🙂


I got to meet up with old friends, mission friends and new friends AND we finally went to that crepe place in Orem I’ve been dying to go to for forever! It was all it was cracked up to be 🙂

The roomies came over for dinner, at my place and we had a great time with great company, good food, and fun times.

This week in our mission planning meetings we focused a lot on sharing the gospel online, Elder Ballard has asked return missionaries to post an experience from their mission using #mymissionchristmas.

I absolutely love Christmas, family, traditions, and wonderful food!!!


One of my absolute favorite Christmases was as a missionary in Omaha, Nebraska.

We started that day going to breakfast with a few related families in the ward. We help set up and I hadn’t talked to my family since Mother’s day, almost 7 months. I had so many emotions running through me that I couldn’t eat, I was shaking a little. I had waited for this moment for such a long time, and it was finally here! I finally got onto Skype and I was completely overjoyed to see my beautiful family so far, yet so close to my heart. We talked and talked and I think I even snuck in a lesson in there haha. I didn’t want to hang up I knew it would be months and months until I could see their wonderful faces again. I just felt Real Happiness talking to them, families bring true happiness in our lives!

After we went door to door handing out cards that had links to a Christmas video called He is the Gift. You can check out this years video at We had some pretty funny encounters, one guy asked me if I had a girlfriend and offered willingly to be mine if the answer was no. At another house a drunk guy wanted to hug me and ended up chasing me a little when the answer was no. Haha so many memories! It was amazing to see people on actual Christmas day, hard to explain, but I had always spent the entire day with my family. On the day that we celebrate the birth of Christ who gave love to so many it just made sense to me that there was no better way than serving others. We ended up knocking around a hundred doors on that Nebraska winter day, we were so tired and cold BUT I was truly happy!

We headed over to our investigators house, I love that family sooooo dearly!!! The wife was a member and we were teaching her husband. He later was baptized I am pretty sure I cried the day I found out 🙂 They are just so wonderful!!! We were so lucky to eat dinner with them and their extended family too! We shared a message and I felt it again, True Happiness 🙂


We ended the night caroling with other missionaries in the area. The spirit was so strong as we sung songs that testified of the most incredible gift God has ever given to man, His Only Begotten Son, Jesus Christ. My favorite part of this picture is the Temple in the top corner. I am so grateful for everything in my life!!! I have always been incredibly blessed! I love this gospel, I love my Lord, I love the people in my life, the incredible opportunities I have everyday, and countless more blessings I can’t even count! I am especially grateful for True Happiness that is only gained through the blessings that our Lord has given us, and even though I will never be able to pay him back, I try everyday to be faithful and serve him.

Banana Bread

It’s beginning to look a lot like Christmas… actually not really we haven’t seen a lot of snow and it’s actually been really beautiful weather!!!

I am so excited for this season!

I had the amazing opportunity to go to the Christmas Devotional this weekend. What a beautiful opportunity to hear the leaders of the church testify and give thanks for the incredible gift that we have been given, which is our Savior Jesus Christ.


I loved Sister Burton’s talk. Lately as I have noticed so many around me who are going through hard times, and probably many more who don’t mention their struggles. It breaks my heart and I have gained an even greater testimony lately of the power of charity and looking outwards to help others.

Sister Burton told the story of two tough experiences she went through in her life and the love and peace she gained through her testimony of God’s plan. You can watch it here. We have the have the choice to either take the tough experiences we go through in mortality and learn from them and turn to God, or “will ye also turn away”? In her own words:

“When times are difficult we can make the choice to turn away from him and struggle through our afflictions alone or we can make the choice to turn to him and the father’s plan, finding that we will suffer no manner of afflictions but tha tit were swallowed up in the joy of Christ.”

I wish I could help everyone who is suffering realize the love that God has for each and every one of them. That he sees them and their potential as so much more than they can imagine. That he knows them personally! That he suffered all their heartaches and is the only person in the entire universe that can understand perfectly what they are going through.

In my life the best remedy for when I am going through hardships is to look to others who are suffering too and be an answer to their prayers. Be grateful for the trails you are enduring. They teach you priceless lessons that shape you into the wonderful person you are striving to become. NEVER give up! There are so many that surround you, who love you! Dont be afraid to let them know what you are going through.

It truly breaks my heart to know that their are people out their who feel alone. Christ will never leave you. His hand is always extended, it is up to you to grab on.

He died for you.

For You!

I testify of the increidble gift that the Atonement is, that the Father gave us his only begotten Son and that through him we can have eternal life and joy!

This week was mostly working on end of semester homework.

I got to go ice skating and biffed it a few times, gracefully of course haha. It was really fun that I had the opportunity to cover the Freezefest for BYUSA.

I got to go to the Christmas market with some friends and met a Llama, I saw a hilarious pillow I wanted to buy that said, “Como se … Llama.” I was dying, haha, I am so easily entertained sometimes.


I have been working for a couple of weeks of fufilling my life long dream of playing the guitar! I can play a few songs and handful of Christmas ones. I’ve gotten a lot of the chords down, it’s the strumming patterns that catch me a little off guard haha. In fact my spanish class at work is going to sing “Feliz Navidad,” for our Christmas party and they decided I was playing the guitar… I don’t know who thought that was a good idea, but I’ll let you know how it goes 🙂

Some friends and I went to my first Vocal Point concert this week!!! After I got to meet them all and they we all such sweet guys 🙂 I got a selfie with them and a lot of them liked it on instagram, haha we are practically besties 🙂 That’s my claim to fame!

Blessing #3 gazillion…



1/2 C butter

1 C sugar

2 eggs

4 mashed bananas

2 C flour

1 tsp baking soda

1/2 tsp salt


Put the butter and sugar into an electrical mixer.


Mash the Bananas.


Cream the butter and sugar.


Add the rest of the ingredients. Put into a greased bread mold and bake at 350 degrees F for 1 hour!

A Thanksgiving Menu

Sorry! I skipped a couple of weeks, but I’m still here, living in this beautiful, wonderful, lovely world. There is just so much to be grateful for! This season just makes me so excited, family, friends, traditions and so much more!

Thanksgiving was wonderful! I had my hands full, planning the menu, cooking it all up, and preparing for guests. Recipes for all the thanksgiving feast are at the end of this post 🙂

Before I get ahead of myself let me update y’all on some of the amazing blessings I am grateful for lately in my life…

Ahhhh I have to tell you!!! I got to go to my first Velour concert!!! A friend took me to see Moth and the Flame, I had been wanting to go to Velour for like forever and my wish finally came true! It was so fun!

My friend and I have a goal of visiting every temple in Utah, so we went to the beautiful Payson temple, it was gorgeous! I am so grateful for temples. I am so grateful for the amazing blessings and eternal perspective we gain in the House of the Lord. I love to see (and be in) the temple!

I got the opportunity to be a floor director for BYUTV 12pm news! I am super privileged and excited to work with the amazing faculty and have learned so much already! I’m so excited to be working hands on in a newsroom and see what I could be doing soon! Its so exciting!!! I’m still working as a journalist for BYUSA and covered a few events lately.


In two days it will be exactly 3 months since I’ve been back from my incredible experience of serving as a missionary for the Church of Jesus Christ of Latter-Day Saints. An amazing blessing I got this week is that the Ramirez family visited from Omaha! I love them more than words can express! Sister Ramirez was the the relief society president in an area I served in for about 9 months and I had the privilege to work closely with her, she is an angel! Her and her family came to spend thanksgiving with us and we had a wonderful time!

After dinner we reminisced on mission memories, had a game night, and eventually it turned into a dance party… as usual haha

I could literally could go on forever, my life is perfect, I don’t know why I am so blessed. I haven’t done anything amazing in my life to deserve all these blessings, I am forever indebted to my amazing Heavenly Father.

I just want to share all the things I’m grateful for with all those around me! Where much is given, much is required. Looking outward, always abounding in Charity, trying to be the Lord’s hands here on the Earth is what brings true joy and happiness in our lives.

That is the biggest blessing we can have is a clear conscience and knowing that you are always doing the Lord’s will. Sometimes it’s hard, but I have never followed a prompting of the Spirit and regretted making that decision. Sometimes the reason why you were supposed to do something or not getting what you wanted doesn’t come to fruition until later on down the road, or sometimes at all. BUT I promise if you, “care more about  what God thinks, and let the consequence follow,” everything will be alright in the end. Heavenly Father knows the end from the beginning, he is our creator, our daddy if we are trying to be faithful he will not let us fail. Fear of the future and Faith in God plan and timing cannot coexist. Choose today to trust the Lord, and let go of that fear.

Let it go, it will make you free.

This year, I was in charge of the food for Thanksgiving. It was kind of a big challenge to take on single handedly, but I love to cook as you know, and had fun doing it! Besides it let my mommy relax a little this Thanksgiving, she already does so much 🙂

Butternut Squash Soup
Turkey (obviously)
Mashed Potatoes and Gravy
Green Beans
Cranberry Sauce
Sweet Potato Casserole
Pecan Pie
Pumpkin Cinnamon Rolls





Personally probably my new favorite soup, and not that hard to make!

6 Tb diced onions
4 Tb butter
2 butternut squashes
3 cups (or more! feel it out) of water
4 cubes (or 4 tsp) chicken bouillon
1/2 tsp oregano
1/4 tsp black pepper
1/4 tsp cayenne (I dosed this soup up with cayenne I like the kick, so I added a lot more than this, just season to taste)
2 packages cream cheese
1/4 C brown sugar

Peel and cut the butternut squashes each into 8 pieces. Smother in olive oil. Sprinkle with salt, pepper, and garlic powder. Put in the oven on 350 degrees F for one hour.


Take out of the oven and cut into cubes.


In large pot brown onion in the butter. Then add squash, water, bouillon, oregano, black pepper, and cayenne.


Bring to a boil and cook until the squash is super soft, around 20ish minutes.


Puree squash and cream cheese in a blender or food processor. Here is where you add water if needed.


Return to sauce pan and heat throughly, add the brown sugar, and keep checking the taste and add spices (like cayenne!!!) accordingly.



12 lb whole turkey
6 tb butter
4 C warm water
3 Tb chicken bouillon
2 Tb dried oregano
2 Tb dried minced onion
2 Tb seasoning salt

Preheat oven to 350 degrees, rinse and wash turkey. Place in a pan. Mix together water with the bouillion, then add the oregano, died onion, and seasoning salt.


Separate skin over the breasts and cut out little pockets, put the butter in these pockets between the skin and mean, this will make the turkey juicy. Pour over the turkey the bouillon mixture.


Cover with foil and bake in preheated over for 3 1/2 to 4 hours or until the internet temp of the turkey is 180 degrees F. For the last 45 minutes take off the foil and take out when the turkey browns. Drain and keep the dripping we will use these later for GrAvY 🙂


I’m going to be straight up honest, I don’t love this cornbread recipe… It’s not sweet (you could try throwing in some sugar? hmmm that’s a good idea), BUT if I do end up making a fabulous cornbread someday… I’ll let you know.

1 C cornmeal
1/2 C flour
1 tsp salt
1 Tb baking powder
1 C buttermilk (easy trick add 1Tb vinegar to 1Tb less than a cup of milk, let sit for 5 min, and Boom you have 1 C buttermilk, you’re welcome!)
1/2 C milk
1 egg
1/2 tsp baking soda
1/4 C shortening
2 Tb shortening

Preheat over to 450 degress F. Combine cornmeal, flour, salt, and baking powder in a bowl.

Add together buttermilk, milk, and egg. Stir together and add the baking soda and mix.

Pour the liquid mix into the dry, stir until combined.


In small bowl melt 1/4 C shortening, and slowly add shortening to the batter, stir until just combined.

In oven safe skilled, melt remaining 2 Tb shortening over medium heat. Pour in batter onto hot skillet (listen for the sweet sizzle).


Cook on stovetop for 1 min, then bake for 20-25 min or until golden brown. 


5 lb potatoes
3/4 C butter
1 pkg cream cheese, softeend
1/2 C half and half (I just melted 1/2 tb of butter in a half cup measurement and filled the rest of the measuring cup with milk)
2 Tb seasoned salt (honestly to taste, I might have used half the bottle :/ it tasted good though!)
1 Tb black pepper (ditto to the seasoned salt)

Wash, peel, and cut potatoes into cubes. In large pot boil enough water to cover 5 lb of potaoes (I’m good at being exact, haha), bring to a boil and cook until easy to slide a fork into (20ish minutes?, like I said exact).


Drain and mash the potatoes over low heat. Turn off stove and add butter, cream cheese, half and half, and mash it together. Put some muscle behind it 🙂


Then add seasoned salt and black pepper (like I said to taste, trust me the more the merrier the taste buds)


Stir and ta-da all done!


Remember I said to keep the turkey drippings… look at it, perfect!


Mix 1/2 C flour with some of the dripping and mix until smooth. Add it back in the dripping and let it come to a roaring boil.


Then set it aside, easy as pie! BTW pie recipe coming up… If you feel like your gravy is too watery or thick add water/broth depending on the saltiness or mix a little more water and flour and add to the mixture until desired consistency. Just remember it thickens as it cools.


1 lb frozen green beans
3 Tb sliced almonds
1 Tb butter
2 Tb olive oil
1 medium onion, diced
1 Tb oregano
ground black pepper

First off I guess I was caught up in the thick of things, because I have only one picture to prove I made this. Lo siento!

In skillet caramalize onions in the butter and olive oil.


Add the almonds cook for 2 minutes, then add the oregano and green beans. Add salt and pepper to taste!


1 12 oz bag cranberries
1 C cranberry juice
1 C honey
3 Tb any citric juice (I used orange juice)

Wash cranberries in cold water


Pour in cranberry juice, honey, and the citric juice. Stir on high heat until boiling. Then turn heat to medium low and continue cooking until thick and almost jelly like (it took me over half an hour but you’ll just have to eyeball it). Turn off heat. Done 🙂

SWEET POTATO CASSEROLE (my amazing co-worker gave me this recipe)

3 C canned sweet potatoes (you can do fresh and cook them too!)
1 C sugar
1/2 C butter, softened
2 eggs, beaten
1/3 C evaporated milk
1 tsp vanilla

1 C brown sugar
1/2 C flour
1/3 melted butter
1 C pecans (optional)

Combine all ingredients.


Beat them up, seriously, release all that pent up anger at the finals coming up soon, that guy who cut you off on the freeway, and beat those worries away. This sweet potato casserole will make all worries fade away, so yummy!


Now combine all ingredients to the topping in a medium bowl.


Put potato mixture in baking dish and sprinkle with the topping. Bake at 350 for 25 min.


WAIT WAIT the amazingness isn’t over, take out of over and cover the whole thing in little marshmallows, put it back in the oven until the marshmallows melt and brown like they do when your making smores… Ahhh I love smores!!!! I should post smore recipes! Like Smores cake, bars, the possibilities are endless. Welcome to my mind!


2 C whole milk
1/2 C oil
1/2 C sugar
2 1/4 tsp / 1 pkg yeast
5 C flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Mix milk, oil, and sugar in large sauce pan and take off the heat once bubbles start forming. Let it sit for an hour.


Sprinkle yeast on top after the hours up and let it sit for about 5 min.


Then add 4 1/2 C flour and mix thoroughly.


Cover with plastic wrap and let it sit in a warm place for an hour.


When done rising add 1/2 c flour, baking powder, baking soda, and salt. Flouring your hands a little, make little ball and line up your rolls on a pan, or cookie sheet.


Let them rise for about an hour or until doubled in size, and bake them at 350 degrees F until the tops are barely tinging on golden brown.


1 Pie Crust (half of this recipe)
1 C sugar
3 Tb Brown Sugar
1/2 tsp Salt
1 C Corn Syrup
3/4 tsp Vanilla
1/3 C Melted Butter (salted)
3 eggs, beaten
1 C Chopped Pecans

First start out by making pie crust.


This recipe always comes in useful, click for my Perfect Pie Crust recipe. (*p.s. make half of the recipe for one pecan pie)


Preheat oven to 350 degree Fahrenheit, place pecans in prepared pie crust.


Place sugar, brown sugar, salt, corn syrup, butter, eggs, and vanilla together in a bowl.


Mix 🙂


Pour over pecans and cover pie gently with foil. Bake until filling is almost set (60 Mish minutes for me, but you’ll have to eyeball it) then remove foil and bake until edges are golden brown. Cool overnight.


PUMPKIN CINNAMON ROLLS (my personal favorite, and aren’t the pictures great! Just saying…)

1 1/2 C whole milk
1/2 C oil
1/2 C sugar
1 pkg / 2 1/4 tsp active dry yeast
1 C pumpkin puree
4 C flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/2 C flour (additional)
1/2 tsp baking powder
1/2 tsp salt


1/2 C butter, melted
1/2 C sugar
1/2 C brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1 C finely chopped pecans

8 oz cream cheese softened
1/2 lb powdered sugar
1/4 C whole milk
2 Tb butter, melted
dash of salt

In a large sauce pan, combine milk, oil, and sugar. Heat until bubbles form and remove from heat and let sit for 60 min.


Sprinkle yeast after the hour is up and let sit for 5 min, stir in pumpkin.


Combine 4 C flour, 1/2 tsp cinnamon, 1/4 tsp nutmeg, and 1/4 tsp giner and stir into the pumpkin mixture until it just comes together.


Cover with plastic wrap and let it sit for 1 hour in a warm place.


While you wait make the frosting! Combine all ingredients and beat.


You can add maple flavoring to the icing, if desired 🙂


Combine all ingredients for the filling in a small bowl except for the butter.


I threw the pecans in my food processor so the would be a little smaller.


Preheat over to 375, and grease 4 pie pans.

Turn out dough on a floured surface (adding flour because this dough is STICKY!)


Rolls out to about 10 x 30 in and melt the butter for the filling and pour over the dough.


Sprinkle the filling mixture all over…


and roll it up carefully scrapping under as you roll so the dough won’t stick to the table.


Isn’t this roll soooo pretty!


Take some floss and sliding it under cross and pull to cut out your little buns. Don’t judge the Christmas apron, i’m super excited for Christmas!!!


Place in the pans and let rise until almost doubled in size, the bigger the more fluffy and light these delicious cinnamon rolls will be!


Bake for 15-20 minutes or until the edges are golden brown. Let cool a little, then ice them good!

Argentinan Empanadas

This week was AMAZING as always, I am still waiting for a week where I am not busy 24/7, but honestly between you and I, I never want that day to come. I love filling my life with experiences that help me to help others and grow! This life is to be lived to the fullest everyday 🙂 An amazing companion I once had told me wake up telling yourself that today will be the BEST day of your life so far, and then make it happen!

In other news I was in the BYUSA office, Brennan, the guy next to me in the office and I started chatting, and I found out he was the President of BYU. It was super cool to hear how he started off, surprisingly in my same position, and now he was the President. He talked to me about the ways I could get more involved and help the students at BYU to have a better experience here at school. We ended up talking for a long time and now I am so excited to go out there and help my community!

Sister Kennion came to visit me this weekend, she is such a sweetheart to drive all the way from SLC, but I was so excited to see her!!! We had a great time and we loved reminiscing on amazing mission experiences we went through together!

When I visited my grandparents visited this weekend, I was surprised to find one of the missionaries that helped in their conversion there. I was so excited to meet and thank him for helping convert my family! If it wasn’t for missionaries like him my mother would never have come to Utah where she eventually met my father and now here I am just back from serving a mission. It is amazing to see the chain reaction that come about from the effort of one person working together with others that Heavenly Father puts into our path to help His children return back to Him.

My cousin Efrian got his mission call this week!!!! He is going to Mexico City, Mexico!!! He is the second person in our family to go on a mission, it is a huge blessing to our family! I have already seen how it affects everyone, even my non member families showed up to support him. I am blessed to be in an amazing family! He is so excited to serve and I know he will be a stellar missionary, he already has the spirit so strong! He is so lucky to be starting off an this epic adventure, I sometimes wish I could be in those shoes again 🙂

One of my absolute favorite talk is by Elder Jörg Klebingat, called Approaching the Throne of God with Confidence, it brings me back to a time in mission that I hold so dear to my heart. I had an amazing companion that had to leave the mission because of medical issues. It broke my heart, she was an incredible missionary, and she had become my absolute best friend. I was transferred to the furthest area from the mission home and my current area that I could go.

I found myself in a Trio in the beginning of Winter in an new area, with new companions, I was still a fairly new missionary, the branch attendance was small, we didn’t have a car in our giant area, and the list could go on in my little negative view in those days. I missed my old area, the people, and everything! I didn’t want to be in Grand Island.

I ended up only being there for about 6 weeks, but I grew so much in such a short period of time. My companions became my best friends and I feel like I was being trained all over again. I learned so much about following the spirit, working hard, putting others needs before your own, forgiveness, I could go on but that’s a discussion for a different time.

General conference was during this time and as I listened to this talk by Elder Klebingat, my life changed forever. Tears flowed down my cheeks as the principles he shared penetrated my heart. Daily repentance made me think a lot and I remember thinking that even though I knew I had a fairly clean conscience that I wanted to have a completely clean slate in life. I reflected on my life and if I could think of anyone in my life I needed to apologize or forgive, I decided to write to them. So I did, I’m not going to lie, it wasn’t easy, I shed many tears, I never knew how painful and scary putting a envelope in a mail box or pushing a send button could be.



To this day and forever, I will continue to repent immediately and thoroughly. I want to be worthy of the spirit and I need to be clean to feel that. The happiness that comes from having a peaceful conscience doesn’t allow me very long to not repent or forgive someone. Even when it’s embarrassing, I care “more about when God thinks and let the consequence follow,” and if the consequence is using the atonement to be always clean and that when I take the sacrament I can do so with joy, IT IS WORTH IT.

I Love Immediate Repentance 🙂

And now for the recipe!


I have a good friend who served his mission in Argentina and gave me this amazing recipe for empanadas.

Pie Crust for the equivalent of two pie crusts (The exact amount that this recipe makes)

1 Medium onion, diced

1 lb. Ground Beef

4 Eggs, boiled and quartered

1/2 C Raisins

1/2 C chopped green olives

1 C oil (divided)

2 Tb Cumin

1 Tb Paprika


Fry the onion in 1/2 C oil over medium heat, until browned.


Roll out pie crust dough thinly and cut out into circles with a diameter of 4-6 inches.


Add the ground beef and raisins to the browned onions, and cook over medium until the meat is browned.


Add the remaining ingredients to the meat mixture and cook for 2 minutes.

In a separate frying pan, heat the remaining oil over medium heat in preparation to fry the empanadas.


Place a spoonful of the meat mixture into the pie crust circles.


Fold over half and use a fork to seal the sides together.


Put the empanadas into the heated oil and turn over when golden brown.

Cool on paper towel to absorb the oil.

Banana Creme Pie

I can’t believe its been 2 months.

Two months since, I have been back from the most incredible adventure I ever embarked on.

Being a missionary for the Church of Jesus Christ of Latter-day Saints.

The adventure never ends though, just because I don’t wear the plaque doesn’t mean I’m not wearing it on my heart.

So much has happened since I came back, it’s almost a blur.

I am so grateful for the lessons I learned so far, and many more to come, I have so much more to become.

You come back from the mission and assume you figured out life, I didn’t realize how many mistakes you can make in such a short period of time. That’s why I am so grateful for the spirit, He guides us, as long as we are doing our part by living a life that is worthy of His company.

My mission taught me that type of life I need to live, through prayer, scripture study, temple attendance, daily repentance, obedience, and the list goes on.

I am so grateful for the atonement of Christ, it gives me hope that each day I can become a better person.

None of us are perfect and we won’t reach that in this life, but we can do what we can and leave the rest to the Lord.

Christ cares more about Potential than Perfection.

He looks upon the heart.

I had quite the week, it started off in California…


Went to Oakland, to attend one of my best friend’s wedding, her and I were companions in the mission field. She looked gorgeous and so happy! It was beautiful, I had never been to a temple sealing before. The spirit was so strong and it really changed my eternal perspective on life.

I got into my first car accident the day I went home, that shook me up a little bit, haha.

It wasn’t that bad though and I was still able to drive home safely.


Some highlights of the week were that I got my press pass for BYUSA, so I can interview and take pictures at events, like a journalist!

At my job, we had a halloween party, which was so fun! I am so blessed to have such an amazing job and get to work with amazing people!


I did the Halloween half, which was my first half marathon. My time was 2:05:34.7 I wanna try for a Marathon next year!


I spent most of the week with my family, I am so grateful to be with them eternally. They are perfect for me, and I love them more than words can describe. I know that no matter what happens, they will always be there for me. I am the luckiest girl in the world 🙂

I had an INCREDIBLE Sunday!

I was asked to speak to the Young Women in my home ward. Looking out on all those girls, and how many expressed desires of going on a mission, I just felt the spirit so strong. They have so much potential! I got to stop in and visit my parents nursery class, little children are so innocent and adorable!

The bishop of my single’s ward extended me a call as ward mission leader! I was so happy! Heavenly Father knew my desire still being a missionary, and now every week I get to have proselyting time, and work with the surprisingly high amount of non members we have in our ward. I am humbled that Heavenly Father would trust me with this calling, but I will do all I can to be a tool in the Lord’s hand and hopefully help someone understand the love the Lord has for them.

I got to spend some time with my cousin who is getting his mission call this week. We talked about missionary life, and studies and I was just so excited for him. He is so lucky to just be starting his mission and I know he is going to do amazing things!

And now to the part you have all been waiting for the recipe for Banana Creme Pie!

We visited a sweet member of my home ward. His wife really touched my life, and has since passed away. I found out his favorite dessert is Banana Creme Pie, so we knew we had to make it for him! We talked about life and all shared our favorite scriptures as we ate this delicious pie!



3/4 C Sugar

1/3 C Flour

1/4 Tsp Salt

2 C Milk

3 Egg Yolks, Beaten

2 Tb Butter

1 1/4 Tsp Vanilla

1 (9in) Pie Crust, Baked *Click on the link for the best pie crust recipe EVER, bake for 15 min before using in this recipe.

4 Bananas


In a sauce pan, combine the sugar, flour, and salt. Add milk gradually while stirring over medium heat.


Keep stirring until the mixture is bubbly. Keep stirring and cook for 2 more minutes then remove from the burner.


Stir a small amount of the hot mixture into the beaten egg yolks.


Immediately add the picture into the entire hot mixture. Cook for 2 minutes, while stirring.


Remove from heat and add butter and vanilla. Stir until smooth.


Slice bananas (I didn’t try it this time, but next time I think I will puree the bananas and add to the pudding mixture) and put into cooled baked pastry shell. Top with pudding mixture.


You can cover edges with aluminum foil so they don’t burn and take it off for the last few minutes of baking, but it’s up to you. Bake the pie at 350 degrees for 12-15 minutes. Put it in the fridge for an hour. Serve!


The pie was a hit, and paired with good company, and scripture reading it was a great ending to this week.

My sister’s favorite scripture really touched me, Helaman 5:12, I had been thinking a lot about foundations lately. I realized that many problems that come to us in life are because we don’t have our foundation in Christ. Decisions are so much easier to make when we put the Lord’s will first then everything else will fall into place, but if we don’t have that foundation it will be hard when “mighty winds” come. If we don’t have a strong foundation, it’s harder to help those around us. Sometimes we have to give up what we want, because we know it will help someone else. Charity Never Faileth.
